Big Hit
Apple Crisp
Fill up a 9x13 cooking pan with
chopped apples. Add a few table spoons of maple syrup, cinnamon, and allspice to
taste.
Topping. It’s about a cup on everything, any butter, room temp.
(we used soy margarine in class), rolled oats, wheat pastry flour (found at
health food store) and you only need about a ½ cup of raw sugar. Mush up and put
on top. If you like extra crust just add a ½ cup to all ingredients Bake at 350
for about 45 minutes. Until crust is browns (oven’s differ)
Zucchini: chop, sauté in olive or walnut oil add several table
spoons of sunflower seeds, garlic powder, pepper and salt and a little marinara
sauce to taste, top with Parm. Cheese if choose.
Salad dressing:
1 cup olive oil, can substitute some walnut oil. 5-6 table spoons of vinegar
(Italian, balsamic, is what we used in class), few drops of lemon, garlic
powder, fresh herbs chopped small (rosemary, oregano), basil dried is what we
used in class. Give it a good shake.
Be creative on the salad. Grate
veggies to make them more eatable if something is not your favorite.
Ziti: for a family (we made three times the amount you would make
for your family)
Boil one package of pasta of choice. If in a hurry jar
sauce is good too, but if making sauce get two large cans of tomatoes crushed 24
oz. chop onion, garlic, to taste and sauté, add tomatoes, and lots of herbs,
fresh or dry or both. (basil, oregano, rosemary), and pepper. The can tomatoes
should have plenty of salt. Cook on low for at least 45 minutes after you have
gotten sauce to lightly boil.
Then layer: small amount of sauce on
bottom, noodles, ricotta cheese, parm. Cheese, grated zucchini, chopped spinach,
carrot, then more sauce, and noodles and top with mozzarella cheese. And bake
for 45 on 350 degrees (all ovens are different, so bake until cheese on top is
brown)
