I want to thank each student for making my first cooking class a great success.
You girls were awesome and I mean awesome!! I’m so proud of all of you for your
contributions and participation. I have no doubt all of you will be successful
in life. Excitedly, I’m proud that you tried new things with fantastic
enthusiasm.
Here are the recipes, and feel free to call or email me if you have any
questions.
Have one of your parents call me if you plan to come next week, so I know how to
plan. We will be cooking dinner for one parent.

Banana Muffins: 2 cups of flour, ½ wheat, ½ unbleached flour, or all
unbleached flour, 1 and ½ tsp. baking powder, ½ tsb baking soda, cream 1/3 cup
margarine, ½ cup of sugar (raw), 2 large bananas, 4-5 tbsp. of soymilk, 1 tsp.
vanilla
Mix the dry things and bananas, margarine,sugar,vanilla together separately,
and then add together, add milk. Bake at 350 degrees. 45-50 min. for bread and
35-40 for muffins. Oil the pan
Tortilla Soup: (so easy)
5 cups of veg. broth
1 ½ cups salsa
2 cans of beans (pinto or, black beans)
cook stove top for a least 30 min. med. to low
add cilantro to taste, chips crushed, squeeze of lime, sprinkle cheese at the
end while serving.
Humus Wraps: 1 can of chick peas (drain and save juice), 2 tbs tahini,
sprinkle garlic powder, all season, tiny bit of lime. Put in food processor,
add juice to get consistency.
Put on tortillas, pitas, bread, and add sprouts, cheese (soy cheese option),
cucumber, tomatoes, use your taste here to guide, remember humus pizza for
snack- (add to bread top with cheese and put in toaster over.) Don’t forget
other Wrap Ideas we talked about for lunches.
Tuna Pasta: 1 box of pasta of choice, 1 can of tuna, don’t’ forget the
spinach (1/2 package of frozen chopped thawed), rice vinegar of choice, dill, a
little 1-2 tbs of mayo (vegan style is what we used in class, but any is ok),
we used vegetarian parm. Cheese and nutritional yeast in class, but any cheese
options will work well. Mix up.
1 package Whole wheat pasta, couple shredded carrots, 1 cucumber chopped, 1can
white beans canned drained, Annies cowgirl ranch is what we used in the pasta,
and a little vinegar.
