Notes and Recipes from August 12th, 2006

I want to give a big thanks to the students who attended class. It was a wonderful class. I really enjoyed cooking with all of you.

Remember most of the recipes were doubled, even tripled in class. I’m going to give instructions for smaller amounts.

Italian Cold Mozzarella Pasta:
In class we used Barilla Plus Penne (enriched multigrain pasta), any pasta will do
One package, boil and cool, before mixing.
One 8 oz. of Mozzarella cheese, cubed
One or two tomatoes, cubed
2-3 tbs. of olive oil
Balsamic vinegar, to taste 1-3 tbs
Red wine vinegar, to taste 1-3 tbs
Italian seasoning, to taste 1-2 tsp
Chopped fresh basil
We also used 2 tsp of sbarro seasoning, but it will work with Italian seasoning too
Mix and chill

Bulger Wheat Salad:
1 cup of water boiled
1 cup of bulgar wheat, add to boiling water, turn off, cover and let stand for 30 min. or more
Boil for 3 min. 1 cup of frozen peas and one cup of shelled edemame
½ bottle of Annie’s Red roasted pepper dressing
Stir and refrigerate over night.
Remember you can add different beans and dressing to your taste and more dressing if dry.

Turkey wraps:
Whole wheat wraps
Low fat cream cheese (about a tbs.)
Raspberry spread without seeds (about a tbs.)
Two turkey slices, and wrap it up

Bean Spread: use on wraps, or tortillas
Two cans of white beans, drained save juice of beans.
Half of lemon, juiced
Dash of garlic powder
Dash of cayenne pepper
Dash of spike or, other all seasoning
Dash of cumin
Put in blender, or processor, and add a little juice at a time to get consistence you want.
Can add a tablespoon of olive oil, if desired

Not so bad chocolate cookies

2 ½ of flour ( 1 ½ cups of unbleached white, and 1 cup whole wheat pastry
1 ½ tsp. baking powder
½ tsp. salt
½ cup honey
3 TBS of sugar
½ cup canola oil
¼ cup of water
1 tsp vanilla
1 cup of semi sweetened chocolate, or carob chips
Mix dry ingredients, mix honey, oil, water, vanilla, separately
Then mix them together. Make little dough cookie circles.
Oil pan, spray a little on your hands, before pressing dough for cookies.
Bake 350 for 15 min.

Lime Drink
One bottle 32 oz of grape juice, no sugar added, one cup of lime juice, fresh squeezed, add crushed ice and serve
